Since mid-May German cuisine is mercilessly served at restaurant Hoffgarten. In the best possible way. Here, chef and host Christian Wemhoff shows off the best recipes from the Baltic Sea to the Alps – putting the fun back into them thanks to a modern interpretation. And it’s especially fun, when you know every supplier by name.

On the small menu, five fish and meat starters, four to five bold mains, and four desserts are a delightful must, out of which you can also compose a menu. Every ten days, a dish or two is swapped out for something new, allowing the menu to organically develop.

One of the classics that unfolds into full splendour is the tartar: cut à la minute and served in a bowl together with a quail egg, the presentation itself is also a visual delight. However, the carnal pleasure is only one part of the concept. The kitchen is just as happy to play about with vegetables and herbs. But the interplay of fish and greens also works perfectly.
