As was already announced October last year, Tobias and Sabrina Buholzer have opened their new workplace, restaurant Die Rose. Now they can once again woo their guests with every trick in the book at the 400-year-old timbered house in the village centre.

We can’t wait for an evening of culinary delicacies and begin with a glass of the house rosé from Provence. The “bits and bites” five-course menu is offered for a very reasonable 95 francs.

If you still have room after the set menu, you should definitely enjoy the specialties from the cheese or chocolate cars- the latter being the only one in Switzerland. The finest, homemade chocolate creations, from chocolate tarts to chocolate terrines. A paradise!

We are served four different homemade breads right away, and a different complimentary bite from the kitchen before each course, perfectly whetting our appetite for the next dish. The first of the bits comes shortly after, made of a smoked charr with potato jelly, salmon confit, and sour cream.

There are two options for the main course. I decide on the “Mustica Poulet” from Wendelin Biohof, where the chickens spend all day in open fields and are fed 100% organic food. The meat is very aromatic and tender.

I want to give a special mention to the porcino spaghetti with the homemade Noix Gras, a vegetarian and one of the only morally acceptable variants of foie gras. Even the dessert is animal-friendly, a honeybee made of honey brittle with honey ice cream, mascarpone, and blossom droplets. A true piece of art!

And those who, instead of the set menu, would prefer specialties from Ticino and Lombardy shouldn’t pass up a visit to the adjacent Taverna Rosa with its cosy terrace.

As usual at the Buholzers’, we spent a first-class culinary evening at Die Rose, full of geniality and incredible delicacies with the best regional produce. Definitely worth experiencing!
