We were just recently guests at Sophia’s Restaurant, where we got to experience the concept of “botanical bistronomy” up close. Now we’ve completed our investigation with a trip to Sophia’s Bar.

Once again, the radiant reception makes us feel like we’re in the right place: cheerful and casually relaxed, head barman Roman Kern and his team head towards us, looking dapper in white shirts with bowties and suspenders.

Eloquent and to the point, but without the reservedness one might have expected- or even feared- in the bar of a five-star hotel. We let ourselves sink comfortably into the cosy seats.

Sophia’s Bar is inspired by international hotel bars in Paris, London, and New York, which aren’t just open to hotel guests, but also attract the local nightlife.

An eight meter long granite counter, cognac leather chairs, and a black grand piano- on which soft soul and jazz music is being played tonight- accentuate the cosmopolitan atmosphere.

In reference to the old botanical gardens that border on the hotel, the cocktails are separated into three categories: herbs, spices, and vegetables. Herby essences are created, fruit and vegetables are dried, liquors pulverised, and spices thrown in- from here you get the most exciting creations.

Upon request, you can naturally have any established classic prepared- but that would be a waste of opportunity here. The cocktails from their own categories are so refined, we can’t seem to make up our minds.

We finally decide to start with an “Earl Pepper” from the vegetable category. The cocktail wins us over with a very unusual, yet absolutely delicious combination of flavours from the eponymous black tea and subtle, yet accentuated, hints of paprika.

Our second test subject is the grass-green “Green Gimlet” from the herb category. One of the three bestsellers off the menu, with rosemary and sage amongst others, it exceeds our expectations with its tangy freshness. Snacks are also brought out with it. Our highlight: fresh roasted, caramelised cashews with a hint of chilli- careful, they’re addicting!

Various tapas can be ordered if you’re feeling peckish, with a selection of six variations. Our favourite is the grilled octopus, which is particularly tender and aromatic.

The cocktail menu is changed seasonally with the help of all the bartenders. According to Roman Kern, this means their individual passion is passed on to the guests directly. That’s something we can confirm: the passion for cocktails here is contagious!

We’ll definitely be back, next time through the actual entrance rather than the hotel lobby. We don’t notice the side entrance until we’re already leaving: Sophia’s sits above in lit up lettering, luring you into the relaxed bar atmosphere.
