It hadn’t been two weeks since the opening of new restaurant Slate when host and initiator Nicolas Schmidt welcomed us a few days ago on Elisabethkirchstraße in Mitte. Gallant and experienced. A professional on familiar terrain, as he was previously restaurant manager at the local Weinbar Schwein.

As the successful predecessor decided to move to City West over the summer, Schmidt didn’t hesitate to plan a restaurant under his own direction. He took Philipp Hanske, a friend and colleague from his days at Arlon, on board as his business partner, and won over Lukas Bachl as a third man for the kitchen.

As long-time sous chef for two Michelin star chef Hendrik Otto, he recently contributed to the success of Lorenz Arlon Esszimmer and will be responsible for creating a progressive, authentic menu at Slate. Worldwide and international. How well he managed that, we would find out during our visit.

The kitchen’s execution is on Michelin star level and we get more excited with every course. Starting with the amuse-bouche, pork belly cooked sous-vide for 36 hours with finely chopped escabeche, all the way to the breathtakingly good pigeon with juniper crumble and porcini along with the mashed potato over lightly roasted liver.

In between we enjoy the "Mackerel" with coriander prawn crackers and a heavenly mustard-mayonnaise, followed by "Beet Three Ways" doused in an aromatic mushroom stock, and the "Trout" on a fresh bed of cucumber with mâche, horseradish foam, and trout skin crisps. The "Salmon" from Färöer Island with avocado cream, mint, and herb stock is also incredible. It doesn’t get any more tender!

The sweet métier is also well respected here at Slate. The dessert of fine cream on a flat chocolate cake, swimming in a sea of passionfruit foam and Ferrari Spumante, is a wonder. The final blow of a brilliant menu — One of the most exciting openings of the year!
