At the patisserie Mario Kaiser on Schönhauser Allee, in the back room of the confectionary-cafe, the most wonderful creations are made in the workshop of sweet artistry and show kitchen. The lemon tartlet is a prime example of Kaiser's creations.

It surpassess the French classic with and inividual twist using coffee lime leaves and laurel. That's not taught in your everyday bakery, where Mario Kaiser learned his trade. But in Paris with the masters of the art of patisserie.

An internship with a strict, but visionary, mentor during his vocational training was the primer. After the apprenticeship, culinary years of travel: France, the legendary Dolder in Switzerland, Michelin star restaurant in London, first head patissier job in the London surroundings.

There, the plans for his own store almost created themselves. By day a confectionary, by night a dessert bar, was how the story should continue in Berlin for Mario Kaiser. But he had to reconsider. Coda had just opened as the first dessert bar in town. The confectionary-cafe would stay closed evenings.

Four tables, a standing table at the window, a few summery seats on the pavement, wooden floorboards, and pictures made of conservative Iceland moss on the wall create a charming stage for apple-poppy cake, coffee pralines, and hearty quiches above all in single portion sizes and small runs of 10-15 pieces.

In an additional "normal size," coco macaroons, biscuits, croissants, pain au chocolate, handmade truffels from German Chocolate Masters 2015/16 winner Sabine Dubenkropp, spirits from Bonner Manufaktur, and sirup from Fräulein Frucht in Neukölln. Berlin roastery Tres Cabezas are the coffee supplier.

Before the first spring cake, maybe with passionfruit and banana, or lemon thyme, can be created, the patissier first has a birthday cake to bake. For the first anniversary of patisserie Mario Kaiser at the end of January.
